Happy Birthday, Anette!

Today is a VERY special day! Today, four years ago, little Anette was born in Mexico. Most children who live in poverty do not live to see their fifth birthday. In fact, in Haiti, most parents do not even give their children a name until they turn five years old. The children are called, “Ti Chape.”

“It’s a term of endearment … but also a harsh reality that reminds everyone of how devastating each day can be for people living on the brink. Ti Chape means little survivor or one who has escaped death.”

Celebrate with me today the life of this precious child, Anette. We are so proud to be her sponsor and are so excited to see God working to bring children out of poverty – to help them become responsible and fulfilled Christian adults.

As always, feel free to contact me with any questions about sponsorship. I will do my best to answer them :)

Applesauce – How to Make it, How to Can it

September is here and since my favorite season is Autumn, I couldn’t wait to make cinnamon applesauce! Here’s how you can too! Ingredients (and equipment): * Bushel of apples (I got mine from our local farmer’s market – there are a few trees in the back that they don’t spray with pesticides…I can get these [...]

Gluten Free Oatmeal Cookies

Gluten free…oatmeal…and cookies. That’s right, you read correct. How? I really don’t know, since not all oatmeal is considered gluten free. But I do know that when I eat (a lot) of gluten – breads, pastas, crackers, regular oatmeal – I break out in eczema patches. Nothing huge and hardly noticeable. But I notice and [...]

Displaying Photos

So this post is strictly to show Mandi (and her readers) over at Organizing Your Way my favorite way to display photos: French Memory Boards. Super easy to switch out photos and great conversation starters. I have ours going up our staircase…one for each family member. There you go!

Spelt Bread

The title doesn’t sound too appetizing, does it? Nah, didn’t do much for me either. That’s why I added apples and cinnamon Ingredients: * 2 1/4 cups spelt flour * 1/4 cup honey (I use local honey from our farmer’s market) * 1 T baking powder (I use aluminum free…did you know aluminum has been [...]

Updated School Room!

You might remember when I started rearranging the school room here. I had mentioned there were some things that I wanted to change…and it’s finally done! Well, almost…I’ll get to that after these first few pictures (just ’cause I’m so excited!) The girls’ toys used to be in the big girls’ bedroom. After mustering up [...]

WIP Wednesday

Since my #3 daughter was not able to wear cloth diapers (her skin is super sensitive and she would continually break out in a rash as soon as she was wet…no matter how fast I changed her), as my #2 daughter did, I haven’t had any reason to knit (I used to knit my daughter’s [...]

Pie Crust Recipe

I don’t own a pastry blender. My fork has been the fill in for that role for the past….too many years. As a result, I’ve felt that it was easier to just buy the premade pie crusts from the grocer’s. But – when I saw how Amy makes her pie crust, I chuckled and then [...]

Cream of Chicken Soup…Without the Can!

You might have noticed, or not, that I’m *food-otional* rollercoaster. There are some days when I want to eat super healthy, and others….not so healthy. As a mom of three, there are just some days that potato chips are going to be called a snack. But I love when I come across recipes that help [...]

Mexican Rice Casserole

I’ve never done once a month baking. But my friend, Amy, has (no, I’m not envious…or jealous…okay maybe a little ). So, when I saw this recipe on her “To Make” list a few weeks ago, I thought, “HEY! I can do that!” And here’s how you can too Ingredients: (Note, this is for a [...]
