Apple Cinnamon Bread or Muffins

I love muffins! This recipe uses a bread pan, so if you decide to make muffins – be sure to adjust the baking time to about 20-30 minutes.

Ingredients:

  • 3 cups all-purpose flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup vegetable oil (I always use olive oil)
  • 2 cups sugar
  • 2 eggs beaten
  • 1/2 tsp vanilla
  • 2 cups apples peeled, cored, and chopped

What To Do:

1. In mixing bowl, combine flour, cinnamon, baking soda, baking powder and salt; set aside.

2. In another mixing bowl, combine oil, sugar, eggs, vanilla, & apples.

3. Stir apple mixture into flour mixture. (I have found that water needs to be added – just enough to moisten all the ingredients)

4. Divide mixture between two greased 8-in. x 4-in. bread pans (I used a muffin pan). Bake at 350 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean.
