Rosemary is probably my favorite spice, so when I came across this recipe – let’s just say I got excited ![]()
- 5-6 Potatoes
- 1/4 cup red onion finely chopped
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 2 tablespoons mayo
- 1 teaspoon Rosemary
- 1 teaspoon dried thyme
- salt to taste
- pepper to taste
What To Do:
1. Rinse and cut potatoes into chunks. I like potatoes with the skin on – it adds some extra color and I don’t mind the texture. But, if you don’t, go ahead and peel them first.
2. Boil potatoes until tender – on my stove it takes about 10 minutes of boiling time.
3. Chop the red onion into fine pieces, while your potatoes are on the stove.
4. Combine chopped onion with olive oil, vinegar, mayo, and spices.
5. Drain and rinse the potatoes if they are tender.
6. Gently toss or fold potatoes with mayo mixture.
7. Enjoy…serve either right away, while it’s still warm, or chill in the fridge and serve cold.
